So
I get a call from my friends Tom P. and Denise Marie - who say they
caught a giant skate and want to know what to do with it. I'm thinking
a nice size skate but they say no, it's really big. I'm thinking, ok,
they got a 5 pound skate, so what? So when they tell me it's 125 pounds
I didn't know what to think. Last year's first place skate was 4 pounds,
12 ounces. I thought - must be a barndoor skate, which can grow a lot
bigger, but still, 125 pounds? When I saw the pics they took, and saw
that tail spine, which skates don't have, I'm thinking, dude...that's
not a skate. Turns out, it's a butterfly ray and a big one. They are
estimated to grow to a max of 3-4 feet from wingtip to wingtip. This
one was 69 inches. Not a whole lot is known about this fish and outside
of French Guiana and now Denise Marie's house, nobody really eats them.
But, Tom P. took the sunday paper out of the bag, turned the bag into
fashionable gloves and got to butchering and ended up with a delicious
dish and no doubt, many more to come.
