DOGFISH TERRIYAKI MARINADE SUPREMO DELISH

This one is awesome for almost anything from chicken to steak to garbage.. I think traditional terriyaki sauces are way to sweet, thick, and overpowering for marinading, especially for something as delicate as fish. This is more of a traditional thai terriyaki marinade as opposed to the Americanized sugary version you see more often.

Mix - 1 cup of soy sauce - 1/2 cup of worcestire sauce - 1 teaspoon of minced or shredded ginger (or if you don't have it - who cares, but it does add a great flavor) - 1 minced clove of fresh garlic (don't worry emeril, garlic powder will do) - 2 tablespoons of sesame oil (I know, sounds froofy - just trust me) - 1/2 cup of rice wine. (you can use any dry white wine - but don't use cooking wine...too much salt.) You are basically done, but if you want to really hook it up, do a 1/2 teaspoon of mustard powder, a little fresh pepper and put that over your dogfish for 2-4 hours max. I also use this for swordfish and thresher or mako shark steaks.
