This fish that you have no doubt caught 1 bazillion times is very good and very easy to cook. Just don't overcook them as the meat can get dry (like many fish) but maybe this more than others. This is basically a small shark, so recipes that you've used on shark can apply to the dogfish, provided it was cleaned properly and soon. You can actually cut a good size dogfish into steaks and do them on the grill. One thing that I like to do with mako shark is a terriyaki marinade.
